She worked as a bookkeeper, hotel manager, and operated a few cafes over the years. Most of all, Marcia liked baking and trying new recipes that brought joy to family and friends. Below is a recipe of her’s that was a family favorite. Maybe in some way, she can keep bringing happiness to families through this recipe:

Chocolate Chip Zucchini Bread

3 eggs

2 cups sugar

1 cup vegetable oil

2 cups zucchini (peeled, then shredded)

1 tsp vanilla extract

2 tsp peanut butter

1 tsp ground cinnamon

1 tsp baking powder

½ tsp baking soda

1 tsp salt

1 – 11.5 oz bag of chocolate chips

¼ cup chopped walnuts (or to liking)

Pour into small bread pans. Bake at 325 for 25 minutes or until firm.

Other family members who previously also enjoyed this recipe are those who have passed away including her parents, Walt and Dororthy Schneider; sisters, Georgia Jorgensen and Kathy Hassett; and brother, Bill Schneider.
